10 ideas what you can conjure up with leftover cheese

Got some leftover cheese and don't know what to do with it? We have summarized for you the possibilities of using leftovers for cheese. It would be a shame not to use up the leftover cheese.

Did you know that around a third of all food is thrown away on its way from the field to the plate? In Austria, 157.000 tons of opened and originally packaged food end up in the garbage every year. This is 300 to 400 euros per household per year. This is frightening, especially nowadays, when sustainability is playing an increasingly important role in everyday life. Common reasons are, on the one hand, wrong shopping planning and, on the other hand, the wrong storage of groceries (see also our blog article: Load the fridge properly). In addition, many people blindly rely on the best-before date (BBD) and throw away food that has expired immediately and unchecked.

The topic of recycling leftovers is therefore more relevant than ever. When it comes to cheese, we have ten suggestions and ideas for you below.

  1. Freeze cheese? Hard cheese like Parmesan or semi-hard cheese like ours WOERLE Emmental made from hay milk are the types of cheese that are most likely to survive freezing. Better in one piece than grated. And the more airtight the packaging, the better. Other types of cheese not only lose their aroma when they freeze, but also their consistency. You can grate the frozen cheese after defrosting and use it for casseroles or lasagna.
  2. Cheese sticks: Do you have visitors? Homemade nibbles with cheese not only taste better than store bought ones, they are also very easy to make. Cut a roll of puff pastry into strips, sprinkle with grated cheese, twist and bake.
  3. Cheese fondue: It is particularly suitable for cold winter days and is a wonderfully sociable and cozy meal. Here is our recipe: https://www.woerle.at/rezepte/mondseer-fondue/
  4. Cheese and onion soup: A soup is also ideal for cold days and can be conjured up in no time at all with just a few ingredients. To the recipe: https://www.woerle.at/rezepte/franzosische-mondseer-zwiebelsuppe/
  5. cheese salad: A healthy and light lunch or dinner is quickly conjured up with onions, sausage, radishes, fresh chives and pieces of cheese.

6. Cheese Omelet: Omelettes are the perfect way to use up leftover cheese while sneaking in veggies. Here is an example recipe: https://www.woerle.at/rezepte/kaese-schinken-omelette/

7. Polenta with cheese: It doesn't always have to be pasta or potatoes. If you take a look at the plates of our Italian neighbors, you will also discover polenta there. And what goes better with it than mushrooms? Cheese!

8. Käsespätzle (cheese spaezle): In this recipe, cheese plays the leading role. A wonderfully hearty dish for winter days and prepared in no time.

9. cheesesauce: A fine cheese sauce also goes well with many dishes. To do this, carefully heat the grated leftover cheese in hot milk, stirring constantly, until a homogeneous sauce has formed. Refine with crème fraîche. Add noodles and dinner is ready. Or enjoy the sauce together with nachos in front of the TV.

10. Baked with cheese: Stir-fries, one-pot dishes or gratins: none of them would be as tasty without a cheese topping on top. Leftover cheese is particularly good for this. An example: https://www.woerle.at/rezepte/makkaroni-gratin-mit-mondseer-streusel/
