Autumn at the Wallersee
Autumn is coming and the WOERLE farmers bring in the sun-dried, fragrant hay for the last time, which the cows use as winter fodder. It is the time when we become aware of the industriousness of our farmers and, given the bounty of the harvest, are grateful that we are allowed to live in a society of food abundance.
Agriculture is one of the most important pillars of our society. We in Austria and most western countries have food in abundance. This is not a matter of course. At WOERLE, we have a deep appreciation for nature and for our hard-working dairy farmers. They shape and care for our country, without them there would be no delicious hay milk cheese specialties.


Too good for the bin
When it comes to appreciating food, the issue of best-before dates (BBD) is also appropriate. Many consumers often confuse it with the sell-by date and throw the food away prematurely. In this way, huge amounts of food are destroyed every year, which would actually still be edible. This is irresponsible from an environmental and ethical point of view. The best-before date only indicates the point in time at which the food, if stored correctly, will retain its smell, taste, texture, color and consistency unchanged. Cheese in particular is very often still edible and tasty after the best-before date. As long as it tastes and looks good, there's no reason to throw it in the bin.
Soulfood: cheese recipes for fall
Speaking of cheese and food: autumn not only enchants the landscape, but also brings color to our plates. Here are three simple but delicious fall recipes with cheese:
- Before the cold season and the associated soup season begins, there is still time for this wonderfully refreshing one autumn salad with grapes and walnuts and ours WOERLE Emmental made from hay milk.
- Would you like something heartier? How about a Quiche Lorraine made of eggs, onions, bacon, whipped cream and ours WOERLE Mondseer hay milk cheese? The ingredients are distributed in a round, flat form lined with shortcrust pastry and baked heartily in the oven.

Where is it most beautiful in autumn in our homeland?
The good thing about autumn: you can still digest the food well on a long walk or hike. Here we reveal our favorite places in autumn:
- A walk around the Wallersee. On beautiful autumn days you can see how the colorful trees are reflected in the lake. Besides the lake, the second star of this excursion is the sheltered Wenger Moor, an impressive moorland landscape. Don't forget the camera!
- A short hike to the Nockstein. It juts out of the forest next to the Gaisberg and is one of the favorite local mountains of the people of Salzburg. Despite the short distance, there is plenty of variety on this hike - there is even a short climbing section at the end. When you reach the summit, you will be rewarded with a beautiful view of the city of Salzburg and the surrounding mountains. A colorful sight, especially in autumn.
- Hike to the Tannberg: This hike is also particularly beautiful in autumn. Around the Tannbergwirt you have a wonderful view to the south and to the Wallersee.
