“Pairing” is the term used to describe the balanced combination of food and drink. A successful pairing requires that food and drink do not compete with each other. The drink must not stand next to the cheese as a mere accompaniment, nor should it overlay its aromas. Rather, it is about the perfect symbiosis that creates a new taste experience.
As a typical accompaniment to cheese, wine certainly springs to mind. Beer is at least as well suited, because the carbon dioxide content and the foaming of the beer in the mouth combine the aromas with the cheese and bring them out to their best advantage. Also, beer's denser texture and creamier body make it a good pairing with cheese.
People of the same kind stick together
If you follow the rule of thumb, spicy and mature cheese with strong or dark beer and mild cheese with fresh, fruity and light beer, you are almost always on the safe side. But not only these parallel arrangements, in which similar aromas are paired, work, but also contrasts can be quite exciting.

Mild semi-hard cheese:
Milder, fresh and fruity beers are more suitable for mild cheeses such as Woerle Emmental or Woerle Gouda. This includes wheat beers. The high proportion of carbon dioxide in wheat beers also emphasizes the freshness. As an alternative, hop-heavy Pilsner varieties are suitable. The flowery tones of fresh cheese find their resonance in the spiciness of the Pils.

Sliced cheese with red cultures:
A hearty, spicy semi-hard cheese with red cultures, like our Mondseer, goes well with a Märzen or with special beers with a strong malt and grain flavor.

Bergkäse:
Flavorful cheese lovers should try stronger beer with their cheese. Bergkäse can be combined with dark beers or bock beers. The caramel note often present in these types of beer complements the taste perfectly.
