Croque Madame - Crispy cheese bread with fried egg

Ingredients

1 Pack of WOERLE Heumilch Emmental natural cheese slices
1 Sourdough Baguette
200 ml milk
1 EL Butter
1 EL Flour
2 Sticks of spring onion
Salt, ground black pepper
Nutmeg, freshly grated
fresh basil
4 eggs

Preparation

Step 1:

Preheat the oven to 180 ° C hot air.

Melt the butter in a saucepan, stir in the flour and lightly toast. Slowly stir in the milk and cook while stirring to form a creamy béchamel sauce. Season with some nutmeg, salt and pepper.

Step 2:

Finely slice the spring onion and stir into the sauce.

Step 3:

Cut the bread into 6-8 slices and place on a baking sheet. Spread with the béchamel sauce and top each with 1 slice of cheese.

Bake in the oven for 10-15 minutes until golden brown.

Step 4:

Meanwhile, fry the eggs into fried eggs. Remove the loaves, place an egg on each loaf, sprinkle with basil and serve immediately.

Step 5:

Tip! If you like, add 50 g sun-dried tomatoes and chopped basil to the béchamel sauce.

A green salad is recommended as an accompaniment to the cheese sandwiches.
