Mondsee Herb Cookies

Ingredients

150 g WOERLE Mondseer made from hay milk
120 g cold butter
150 g spelt flour
some Organic lemon, zest
some Salt
some pepper, freshly ground
For topping
Herbs such as parsley leaves, oregano, mint, basil, thyme

Preparation

Step 1:

Finely grate the Mondseer. Cut the butter into cubes.

Step 2:

Put all the ingredients for the dough in a large mixing bowl and mix with the food processor or by hand until fine and crumbly. Then quickly knead the crumbs together to form a smooth dough.

Step 3:

Preheat the oven to 150°C hot air.

Roll out the dough on a lightly floured work surface to a thickness of about 1 cm. Cut out round circles. Place the biscuits on a baking sheet lined with baking paper.

Step 4:

Select the herb leaves carefully. Brush the biscuits very lightly with a little water and top with the herbs. Press lightly into the dough with your fingers.

Step 5:

Bake the cookies for 20-22 minutes. They should only color slightly. Let cool down.

WOERLE Mondseer hay milk cheese

Today as then, an incomparable pleasure, our original Mondseer! The hearty, spicy Mondseer is probably the oldest and most traditional red smear cheese in Austria. Its origins date back to 1830.

It is still produced according to a traditional and carefully updated recipe from the Mondsee monastery and cultivated with red cultures several times a week. The daily fresh hay milk, which is so important for its aromatic taste, comes from cows that graze on lush meadows rich in herbs.
