Asparagus and Mondseer rolls with apple vinaigrette and pine nuts
Ingredients
| 1 | Pack of WOERLE Mondseer natural cheese slices made from hay milk |

| 1 | Bunch of green asparagus |
| 1 | Apple |
| 1 | large organic lemon |
| 3 TL | Honey |
| 5 EL | olive oil |
| Chives, finely chopped | |
| A handful of pine nuts | |
| Salt, pepper from the mill | |
| a few chili flakes, to taste | |
| some olive oil for frying |
Preparation
For the vinaigrette, cut the apple into very small cubes.
Mix the lemon juice, some lemon zest, honey and olive oil until smooth. Season with salt and pepper (chili flakes if you like). Mix in the diced apples and the chives.
Clean the asparagus, cut off the ends 1 cm long. Fry the asparagus spears in a pan with a little olive oil for 5-7 minutes, tossing them frequently. Remove from the stove and let cool completely. Lightly salt the asparagus.
