Onion Mondseer Flan

Ingredients

200 g WOERLE Mondseer hay milk cheese
250 g Flour
1 TL Salt
125 g Butter
275 g onion
2 eggs
200 ml whipped cream
nutmeg, grated
salt and pepper

Preparation

Step 1:

Finely crumble the flour, diced cold butter and salt. Add 75 ml of cold water and quickly knead into a smooth dough, roll out and leave to rest in the fridge for a while.


Step 2:

Pour the dough into the mold and prick several times with a fork. Preheat the oven to 180 degrees. Allow the dough to firm up again before putting it in the fridge and then pre-bake for 5 minutes.








Step 3:

Cut the onion into thin half rings, finely grate Mondseer and mix most of it with the onion half rings.





Step 4:

Whisk the eggs and mix in the whipped cream, season with nutmeg, salt and pepper. Place the onions in the mold with the cheese and pour the cream sauce over them. Sprinkle with the remaining cheese and bake for 25-30 minutes.

WOERLE Mondseer hay milk cheese

Today as then, an incomparable pleasure, our original Mondseer! The hearty, spicy Mondseer is probably the oldest and most traditional red smear cheese in Austria. Its origins date back to 1830.

It is still produced according to a traditional and carefully updated recipe from the Mondsee monastery and cultivated with red cultures several times a week. The daily fresh hay milk, which is so important for its aromatic taste, comes from cows that graze on lush meadows rich in herbs.
