Refreshing radish salad with Mondseer

Ingredients

200 g WOERLE Mondseer hay milk cheese
500 g radish
300 g cucumber
1 Apple
4 EL olive oil
4 EL lemon juice
4 EL Vinegar
3 EL fresh parsley
salt & pepper

Preparation

Step 1:

Peel and coarsely grate the radish, cut the cucumber into small, thin strips. Put in separate bowls, salt and leave for 15 minutes.

Step 2:

Squeeze the radish and cucumber well, mix. Grate the Mondseer thinly, peel the apple and grate it coarsely (if desired, sprinkle with a little lemon juice so that it doesn't turn dark). Add the cheese and apple to the vegetables and mix well.

Step 3:

For the marinade, mix oil with lemon juice and vinegar. salt and pepper. Add to the salad and then season with finely chopped parsley.

WOERLE Mondseer hay milk cheese

Today as then, an incomparable pleasure, our original Mondseer! The hearty, spicy Mondseer is probably the oldest and most traditional red smear cheese in Austria. Its origins date back to 1830.

It is still produced according to a traditional and carefully updated recipe from the Mondsee monastery and cultivated with red cultures several times a week. The daily fresh hay milk, which is so important for its aromatic taste, comes from cows that graze on lush meadows rich in herbs.
